Its being a long while since I was last in the kitchen so I have being inactive. Yesterday we made crepe cake. Crepe cake was soooooo good. The Ingredients are simple and its easy to make, but you need a lot of crepe's to accomplish a good cake.
Ingredients: 1 1/4 cup of milk, 3 large eggs, 2 tbsp oil or melted butter, 2-3 tbsp sugur Instructions 1. Place milk and eggs in a bowl. Mix to combine. 2. Add the oil or butter and Mix it in. 3. Place the flour, salt and sugar in a large bowl. 4. Add about 3/4- 1 cup of liquid mix gently to form a smooth paste. this should not take more than a few seconds. don't over mix. 5. add the rest of the liquid mix to form a smooth, watery batter. 6. Add the ingredients into the blender. Add the flour last . Blend for a few seconds until you have a smooth batter. you can also stir it in a bowl as well. 7. Cover the batter and let it rest for at least 20 mins. The batter can be kept in the fridge over night as well. 8. Preheat a 10 inch non-stick pan over medium heat. 9. Brush a layer of butter on a heated pan. I used a silicone brush, but you can use a butter soaked paper towel or cloth as well. 10. Always mix the batter first, before you make each crepe. 11. Pour 1/4 cup of batter into a hot pan, swirl to coat the bottom of the pan. Swirl and spread the batter along the edge of the pan first and then fill the middle with the remaining crepe batter. Make sure the batter is as evenly spread as possible. 12. Place the pan back on the heat to let the crepe cook. 13. For extra soft crepes- cook the crepes only until they are just set at the surface. 14. Repeat until all the batter is used up. 15. Stack the crepes on a plate or wire rack. You can put whatever you want between the crepes once you stack them so enjoy!

We made Monte Cristo Sandwiches. They were so good and I highly recommend them to anyone who likes french toast. They are really easy to make and taste great. The ingredients are: Bread, Eggs, Cheese, Ham, milk or whip cream, TBS of vanilla and maybe a hint of water. How you make these is just make a sandwich then treat it like french toast. Good luck.
